Here are all of the ingredients used in this plant-based breakfast sandwich:
- Ciabatta Bread.
- Just Egg Omelette.
- Violife Cheese.
- Avocado.
- Basil.
- Tomato.

What You’ll Need
This breakfast sandwich doesn’t need many ingredients, but can be customized however you’d like. Aside from the fluffy ciabatta bread, the star of this sandwich is the vegan omelette. Here’s exactly how I made it:
- Pour your Just Egg into a bowl along with water and chopped green onion. The water is not necessary, but I personally like the omelette to be a bit thinner. Especially since the bread is so fluffy, a thicker omelette will make this sandwich difficult to eat.
- Heat your pan and add a quick spray of oil. I personally use avocado oil. Pour your mixture into your pan and let it fill the entire pan. An 8 or 9 inch pan is ideal.
- Once the omelette is mostly cooked through, flip one side over the other. Once the bottom browns, flip the omelette. Once the other side is browned, remove from the pan and add to your sandwich.

Ciabatta Vegan Breakfast Sandwich
Ingredients
- 1 slice Fresh Ciabatta Bread
- ½ cup Just Egg
- 1 tbsp Water
- ½ stalk Green Onion, chopped
- 1-2 slices Vegan Cheese Slice
- 2 slices Tomato
- ½ Avocado, sliced
- 3 Basil Leaves
Instructions
- Start with your omelette. Whisk the Just Egg, water, and green onion. Pour onto a heated skillet. Once the omelette has mostly cooked through, flip one half over the other. Once browned, flip. Allow to brown again then remove from skillet.
- Slice your ciabatta in half. Lightly spray each of the insides with an oil spray. Pan fry until golden brown.
- Add 1-2 slices of vegan cheese (whatever fits) to one half of the ciabatta. Microwave for about 30 seconds or until the cheese melts.
- On top of the melted cheese add the basil leaves, tomato slices, avocado slices, vegan omelette, and the top half of the sandwich. Press down to secure ingredients in place, then slice in half.
