Rainy days call for ramen 🍜

Here’s how to make this super cozy ramen for 2:

01 First make the broth. Heat 4 cups of water on a medium heat then add in 2 sheets of nori, 3 tbsp tamari, 1 tbsp sesame oil, 1 tbsp rice vinegar, 4 cloves of minced garlic, 1 tsp ginger, and sift in 3 tbsp miso paste. Let cool for about 10 minutes then strain into a separate bowl. Set aside.

02 Chop a block of high protein tofu into half and set aside one of the halves (you only need one.) Chop the remaining half vertically and marinate in sesame oil and tamari. Next, coat in a mixture of bread crumbs and corn starch. Spray with oil and air fry (or bake) for about 10-12 min on each side. Once done chop vertically then in half and use as a topping.

03 For the noodles, I used 2 packs of instant ramen noodles and added them to the broth over heat until softened.

04 Divide the ramen and broth between 2 bowls. Top with the crispy tofu, sautéed shiitake mushrooms, sliced radish, and green onions.

Clinging onto summer with this Fig & Onion flatbread 🍕 So fun for a cute date night! Here’s how:

01 Start with the caramelized onions. Roughly dice a white onion creating 5-6 inch strips then sauté in avocado oil on a low heat. Feel free to add more oil if the pan gets too dry. After about 8-10 minutes (stirring every so often), sprinkle salt, 1 tbsp or so of coconut or brown sugar, and 1 tbsp or so of balsamic vinegar. Stir every so often until caramelized! Should take about 30 min. Feel free to crank up the heat a bit at end to speed things up. The timing and heat really depends on your stovetop so use your best judgement.

02 To make the actual flatbread you’ll need pizza dough. I got premade pizza dough to save time and cut it into fourths. Roll out 1 of the fourths pretty thin on a floured surface and oil one side. Place the oiled side face down on a medium heated grill or grill pan for about 5 minutes or until you see visible grill marks. Oil the top of the dough then flip and grill for another 5 min. Repeat with another fourth of the dough.

03 Top your pizzas with cut figs, the caramelized onion, vegan cheese (I like @miyokoscreamery liquid mozzarella), and vegan meat. I used @abbotsbutcher chorizo that I precooked for about 10 min on the stovetop.

04 Add your pizzas into the oven for about 5 min or until the cheese melts. Serve with fresh basil and watermelon mojito mocktails 🍹

For the potatoes chop baby potatoes into fourths and toss with avocado oil, s&p, and paprika. Air fry until crispy 🥔

INGREDIENTS (4 servings):
Avocado Oil
1 Zucchini, diced
1/2 White Onion, diced
8 oz Button Mushrooms, sliced
1 container @abbotsbutcher Chick’n
Szechuan Spicy Sauce OR Teriyaki Sauce
1 cup Jasmine Rice
6 Veggie Spring Rolls
Salt & Pepper

INSTRUCTIONS:

01 Cook the rice in water. Meanwhile, add spring rolls to your oven or air fryer. Bake for 10 min or so then let cool.

02 While the rice and spring rolls are cooking, heat a tbsp or so of avocado oil on a skillet. Add the zucchini, onion, and mushrooms and sauté until tender. Set aside.

03 On the same skillet heat another tbsp of avocado oil and cook the vegan chick’n. Stir every so often. Once the pieces are golden brown, stir in your Szechuan spicy sauce or teriyaki sauce. Cook for another few minutes then set aside.

04 Assemble your bowl with the rice, veggies, chick’n, and spring rolls. Optionally add spicy mayo on the side. To make combine 1 tbsp plus 1-2 tbsp sriracha per serving.

Ultra High Protein Tofu “Egg” Salad Sandwich 🥚🥪

I am obsessed with this vegan egg salad, one because it tastes so good and two because of how much protein is packed in. I specifically use “High Protein Tofu” which is essentially a block of tofu with all the water pressed out. I find mine at either Trader Joe’s or Whole Foods. Regular tofu works just fine though if you can’t find high protein.

Here’s how to make ⬇️

01 In a food processor add a block of high protein tofu along with 2 tbsp nutritional yeast, 3 tbsp vegan mayo OR avocado oil, 2 tsp turmeric, 3 tsp kala namak (black salt), and a pinch of salt and pepper. Blend until smooth and creamy.

02 chop up a block of firm or super firm tofu (not high protein) and gently fold it into the blended mixture. Store in the fridge.

03 Serve as is, in a lettuce cups, or on a sandwich. I love it with lettuce, tomatoes, and chili oil.
