Passionfruit sorbet made in a ninja creami 🍦

Summer may be ending but I’ll be here eating exotic superfoods all year long 🥭🥝🍍We’re going from bland to bright with the most delicious @pitayafoods sorbet made with minimal ingredients right in my @ninjakitchen Creami. So refreshing, simple, and healthy!

To make ⬇️

01 Add @pitayafoods frozen passionfruit into your ninja creami cup. It should be just under the max fill line.

02 Top with a combo of coconut water and orange juice. Make sure to stay below the max fill line! Close it up and freeze for 24 hours.

03 Pop back open your cup and add in a splash of coconut water. Press the sorbet option, then when it’s done add another splash of coconut water and respin. Repeat if needed, but this was enough to create the most delicious, creamy sorbet.

04 Enjoy as is or top with shredded coconut, granola, nut butter, whatever your heart desires 🧡

Whenever I’m looking for a high protein lunch, I always reach for this Spicy Soybean Salad. It’s packed with a high amount of complete protein (complete protein = contains all 9 amino acids) and tastes SO. GOOD.

It’s also an amazing meal prep option, the recipe below is enough for 4 servings! Here’s how to make:

Ingredients:
1 block high protein tofu, diced
1 block tempeh, diced
1 tbsp tamari
1 tbsp rice vinegar
Avocado oil spray
1 cup edamame beans
2 tsp toasted sesame oil
1 tbsp chili crisp @flybyjing
pinch sea salt
3 stalks green onion, chopped
2 cups cooked jasmine rice, to serve
sesame seeds, to serve

Instructions:
01 Dice up your tofu and tempeh and add to a mixing bowl. Toss with tamari, rice vinegar, and a spray of avocado oil spray. You can use regular oil too if you don’t have the spray.

02 Toss well then air fry (or bake) at 400 until crispy. I typically give it a stir after 15 min then put it back in the air fryer until crispy. In my air fryer, it’s about another 10-15 min.

03 Warm the edamame beans (I store them frozen then let them soak in boiling water while I prep the tofu/tempeh) and toss with the tofu/tempeh along with the sesame oil, chili crisp, sea salt, and green onion. Mix well.

04 Keep mixture stored in an airtight container. When ready to enjoy, serve with jasmine rice. I pair about 1/4 of the mixture with 1/2 cup of rice then follow with sesame seeds.

If you don’t like chia pudding, it’s possible

If you don’t like chia pudding, it’s possible you haven’t been making it correctly. To ensure your chia pudding is both nutritious and delicious, adhere to the following steps:

1️⃣ To a meal prep container add 1 cup @edenfoods high protein soy milk, 1 small container @foragerproject vanilla yogurt, 1 tbsp cocoa powder, 1 scoop @sproutliving chocolate maca protein powder, and 2 tbsp maple syrup. Whisk with an electric frother until there are no clumps.

2️⃣ Stir in 1/4 cup chia seeds. Place container in the fridge overnight and by morning you’re left with the best chocolate chia pudding!

3️⃣ I recommend pairing with fresh strawberries, cacao nibs, and granola.

This pudding makes 2-3 servings and is great for fertility/balancing hormones!

Chickpea Egg Bites 🍳

My plant based version of @Starbucks egg bites 😋

Ingredients:
- 1 tsp avocado oil
- 2 cups chickpea flour
- 1 tsp turmeric
- 1 tsp baking powder
- 1/2 tsp garlic powder
- 1 tsp black salt
- 1/4 tsp ground black pepper
- 2 cups soy milk
- 1/2 cup broccoli, chopped
- 4 green onions, chopped

Steps:
1. Preheat oven to 375. First whisk the dry ingredients in a bowl - chickpea flour, turmeric, baking powder, garlic powder, black salt, and ground black pepper.
2. Stir in the soy milk. Grease a muffin tin with avocado oil then ladel the mixture in.
3. Stir in the chopped broccoli and green onion before baking for 12-14 minutes.
4. Let cool then carefully remove from the muffin tin with a silicone spatula and store in an airtight container.

For the girls and the guys! Why you should pay attention to diet if you plan to have children ⬇️

Val (my partner) and I have been centering our diet around our upcoming fertility journey, and the more I have been educating myself on this topic the more I understand how heavily our diet plays a role.

A couple key takeaways:

▪️Eating whatever you want without being mindful can lead to hormonal imbalances or exacerbate symptoms of PCOS. Eating a diet high in processed foods, sugars, refined carbs, and unhealthy fats can lead to insulin resistance which affects ovulation and sperm quality.

▪️Girls - I recently started taking @milamendhealth to help balance my hormones, I haven’t been taking it long enough to give a full report but I’m veryyy excited about this product and have high hopes. I also take @ritual prenatals, choline, and the synbiotic pre/probiotic

▪️Girls and guys - omega-3’s, folate, magnesium, iron, and b12 are key. As a vegan, I give myself weekly b12 shots (I find them more effective than capsules). I definitely miss weeks here and there and don’t have any issues.

▪️Don’t forget about protein, but you also don’t need to overdose on protein. I love mixing @sproutliving into my chia pudding or yogurt bowls and love topping with nut butter and hemp seeds. For lunch I added tempeh and edamame on my salad, I used @edenfoods high protein milk in my matcha, and had a lower protein cauliflower leek soup with shiitake bacon for dinner. FIBER is ultra important as it’s amazing for digestion and keeps you fuller longer.

▪️One of the best ways to ensure you’re getting enough nutrients is by including lots of color into your diet. I didn’t juice this day, but I love incorporating a green juice a couple times a week. My fave combo is kale, swiss chard, pear, celery, cucumber, and something sweet like apples or mango.

▪️BPA free food containers and non toxic cookware are super important. I love @ourplace and recently purchased a BPA free storage container set from @rubbermaid which I’ve been loving!

Resharing one of my most popular fall recipes, Vanilla Fig Chia Pudding 🍂

This reel went viral last year for good reason! Figs are considered a superfood - they contain fiber, antioxidants, prebiotics, and a whole bunch of important minerals. Paired with fiber rich, digestion healthy chia pudding, they are a powerhouse.

Here’s how to make ⬇️

Ingredients:
1 cup soy milk @edenfoods
1/2 cup vanilla yogurt @foragerproject
1/2 tsp cinnamon
1 scoop @sproutliving protein powder
1 tbsp maple syrup
1/4 cup chia seeds

Instructions:
1. To a large bowl or glass container add the milk, vanilla yogurt, cinnamon, protein powder, and maple syrup. Whisk until there are no more clumps, then stir in the chia seeds.

2. Let the mixture sit in the fridge for at least 6 hours then enjoy with whatever toppings you’d like! My favorites for this chia pudding blend are sliced figs, hemp seeds, and granola.
