the perfect summer lunch! so refreshing, filling, and fun to make. here’s how:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
01 Trim the stem off the bottom of your collard green leaf. Vertically shave down the tough part of the stem so that it’s not so tough biting into. Be careful not to shave too much off or it’ll break.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
02 Boil a pot of water and place your collard green leaf inside for 10-15 seconds. Immediately place in a bowl of ice water to stop the cooking process. Pat dry and set aside. 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
03 Prepare your filling - I used vegan mayo, @abbotsbutcher chorizo, cabbage, carrots, and tomatoes. 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
04 Place the leaf face down and fill like you would a burrito. Place all the ingredient in the middle towards the bottom of the leaf, fold the sides in, and roll! Chop in half and enjoy.

onigirazu is a sushi sandwich made with nori, rice, and any toppings you’d like. place a sheet of nori on top of a sheet of saran wrap, add your toppings to a square in the center of the nori, wrap, cut, and enjoy 🍣
I could eat Dan Dan Noodles everyday 🍜 INGRED I could eat Dan Dan Noodles everyday 🍜 

INGREDIENTS:
4-6 Garlic Cloves, minced
2 tbsp Chili Oil
2 tbsp Toasted Sesame Oil
1/4 cup Tamari or Soy Sauce
2 tbsp Coconut Sugar
2 tbsp Almond Butter
1 tbsp Furikake
1 tbsp Rice Vinegar
1 tsp Ginger Powder
1/2 tsp Chinese Five Spice
6 tbsp Water
1 cup Vegan Ground Beef
2 packets Precooked Udon Noodles
Scallions, topping
Black Sesame Seeds, topping

INSTRUCTIONS:
01 Add all sauce ingredients (everything minus the noodles, beef, scallions, and black sesame seeds) to a dish and whisk until smooth and well combined.

02 Cook your vegan ground beef according to instructions. I cook mine until crispy.

03 Once your beef is cooked top with the udon noodles and spicy sauce. Mix in the sauce carefully so as not to break any noodles.

04 When done add to two bowls and top with fresh scallions and black sesame seeds.

INGREDIENTS:
—1/2 cup @justegg 
—1/4 cup water
—1 tbsp tamari
—1 tbsp sesame oil 
—sea salt & pepper
—green onions

for best results use an omelette pan, if you don’t have one that’s fine just cook as you would a normal omelette! serve over rice 🍚🍳
