Coconut Cauliflower Wings with Coconut Green Goddess Dressing.
If you like coconut, you are going to be obsessed with this recipe. These cauliflower wings are made in a gluten-free flour & shredded coconut combo that are crisped to perfection in the air fryer. If you don’t have an air fryer that’s okay, these can be baked in the oven as well. These crispy coconut cauliflower wings are served with a nutrient rich green goddess dressing made from a variety of fresh herbs and coconut yogurt.
Coconut Cauliflower Wings
These wings are incredibly easy to make. Cut your cauliflower into florets making sure to cut off the majority of the stem. Mix the batter ingredients in a separate bowl, then pour over the florets until evenly coated. Add the breading ingredients to a plate, roll the florets until evenly coated, then pop in the air fryer. Any bread crumbs work, but I used Longeve’s Breadless Crumbs which only contain pea protein. They’re gluten-free, vegan, and high protein.
Coconut Green Goddess Dressing
This dressing is incredibly fresh and flavorful. It works well for this coconut focused recipe, but you can customize it to make it your own. If you don’t want a coconut based green goddess dressing, you can swap it for 1/4 cup vegan mayo, 1/4 cup olive oil, or 1/4 cup soaked nuts.
