Edamame Avocado Toast

Transform avocado toast into a delicious high protein breakfast.

Ingredients

  • 1 Avocado, pitted
  • 1 cup Edamame Beans
  • tsp Sea Salt
  • Flaky Sea Salt
  • Nutritional Yeast
  • Sprouts
  • Lemon, juice & zest from

Instructions
 

  • To a food processor, add the edamame beans, avocado, and 1/8 tsp sea salt. Pulse until you reach your desired consistency. I prefer mine roughly mashed, if you want a smoother consistency keep pulsing.
  • Spread onto 4 slices of toast (I recommend sourdough) and top with a squeeze of lemon, sprinkle of nutritional yeast, sprinkle of flaky sea salt, and a sprinkle of sprouts. Finish by grating lemon zest on top and enjoy.
