02/ saute onion, bell peppers, and zucchini. stir in 1/2 block crumbled tofu tossed in turmeric, black pepper, & black salt

03/ mix in the sweet potatoes along w spinach and vegan cheese. plate & top w pico, avo, & hot sauce

1 cup whole wheat flour
1/2 cup almond flour
2 scoops @sproutliving protein powder
2 tsp baking powder
pinch of sea salt
1/2 cup @kitehillfoods protein yogurt
2 flax eggs (2 tbsp flax meal mixed with 4 tbsp water)
1 cup almond milk (add more if too thick)
2 tsp vanilla extract

4 pancakes have about 460 cal; 32g
protein, 33g carbs, and 18g fat

I’ve been embracing slow living these days. Nancy meyers type of grandma hood, tending to the garden and crocheting🪴🧶 

Some things I’ve been prioritizing in grandma hood:

~daily morning pages. just writing down absolutely everything on my mind the first few minutes of the day to clear my mind.

~growing fresh produce. this has been such a fun one, I have 2 raised beds and a bunch of fruit trees in my yard and eating my own food I grew myself makes me slow down and appreciate it so much more!

~reading >> tv/tiktok. idk about you guys but social media has been rotting my a brain a lil bit. reading feels sooo much better mentally.

~mocktails >> cocktails. I rarely drink alcohol anymore and it’s done wonders for my mind and my skin. look for for mocktail content from me in the near future!

~chai and matcha >> coffee. coffee gives me jitters and anxiety, and that just does not align with grandma hood! I use chamberlain coffee’s chai and matcha, both are sooo so delicious and imo better than coffee.

If you love sweetgreen’s spicy cashew dressing y If you love sweetgreen’s spicy cashew dressing you gotta try this cilantro cashew dressing! Only difference is I added cilantro - if you want it to taste exactly like sweetgreen’s, sub the cilantro for a tsp or 2 of chipotle powder. 

Recipe ⬇️ 

INGREDIENTS:
1 cup Cashews, soaked in boiling water
1 cup Cilantro Leaves
3/4 cup Filtered Water
1 Lime, juice from
2 tbsp Nutritional Yeast (optional)
3 Garlic Cloves
2 tbsp Rice Vinegar
2 tbsp Maple Syrup or Agave
1.5 tsp Sea Salt
2 tbsp Tamari
1/2 tsp Red Pepper Flakes (optional)

INSTRUCTIONS:
01 Add your cashews to a bowl and top with boiling water. Let sit for about 20 minutes.

02 While your cashews are boiling, assemble your ingredients and add to a high speed blender.

03 Drain the cashews and add to the blender. Blend for about a minute or until the dressing is fully combined and creamy.

04 This dressing can last in the fridge in an airtight container for up to two weeks. I personally like to store it in a squeeze bottle for easy access.

This Spring Pea Orzo is the perfect healthy lunch (or dinner) to enjoy this spring. Enjoy it as is or paired with protein. It comes together in less than 30 minutes and requires minimal ingredients. Simply cook your orzo then mix into lightly sautéed broccoli rice, edamame, peas, fresh herbs, and lemon zest. Optionally mix in vegan cheese shreds to make it even more savory.

Fresh + Healthy Spring Pea Orzo

Spring recipes are all about bringing together light, fresh, healthy, and flavorful ingredients. Here are all of the healthy ingredients used in this delicious Spring Pea Orzo:

  • Orzo.
  • Broccoli Rice.
  • Peas.
  • Edamame.
  • Lemon Zest.
  • Fresh Herbs. (We used Parsley, Dill, and Chives.)
  • Extra Virgin Olive Oil.
  • Salt & Pepper.
  • Garlic Powder.
  • Vegan Shredded Cheese. (Optional but recommended.)
  • Coconut Milk Drizzle. (Optional but recommended.)

Nutrient Rich Recipe

What makes this spring pea orzo so delicious in my opinion is the combination of fresh herbs and vegan protein used. Here are a few tips to make it great:

  1. Use fresh herbs, not dry herbs. Dry herbs work if that’s all you have, but fresh herbs will be more flavorful and nutrient dense.
  2. Pulse your broccoli florets for 10 seconds or less. If you over pulse them, they’ll get soggy. They should resemble rice granules.
  3. Use frozen peas and edamame beans. Frozen produce can actually have more nutrients than unfrozen produce. This is because the produce is flash frozen the moment it’s harvested while unfrozen produce begins to decay and lose nutrients. Either way works great, but I find frozen is also more convenient.
  4. Mix in vegan shredded cheese. This is optional, but I just love how savory it makes the dish.
  5. Top with lemon zest and a drizzle of coconut milk – also optional! The lemon zest adds a really nice springtime flavor, and the coconut milk gives it a creamier texture.

Spring Pea Orzo

Spring has arrived with this flavorful and healthy Vegan Spring Pea Orzo
Servings: 3 servings

Ingredients

  • 1 cup Orzo
  • 2 cups Water
  • 2 cups Broccoli Florets
  • 1 cup Peas
  • 1 cup Edamame Beans
  • 1/4 cup Finely Chopped Herbs We used Parsley, Chives, and Dill
  • Sea Salt & Pepper to taste
  • 1/2 tsp Garlic Powder
  • 1 cup Vegan Shredded Cheese optional
  • 1 Lemon, zest from
  • Full Fat Coconut Milk, light drizzle optional

Instructions

  • Cook the orzo in water. Meanwhile, add about 2 cups of broccoli florets into a food processor. Pulse until the broccoli has turned into a rice. Careful not to over pulse or it will become soggy.
  • Heat extra virgin olive oil onto a pan then add in the broccoli rice. Cook & stir occasionally for about 10 minutes.
  • Add the peas and edamame beans to the rice and stir to combine. After a few minutes, stir in the cooked orzo. Next stir in finely chopped herbs (I recommend parsley, chives, and a few sprigs of dill), sea salt and pepper to taste, garlic powder, and 1 cup of vegan shredded cheese (I love Violife.)
  • Stir frequently and once the cheese has melted, remove from heat and serve. Top with lemon zest and an optional drizzle of coconut milk.

Anytime I start the day off with a high protein br Anytime I start the day off with a high protein breakfast I find I have a more productive & healthy day. These high protein overnight oats are sooo easy, amazing for meal prep, and are loaded with protein. 

To a jar add 1/2 cup rolled oats, 1/2 scoop protein powder, 1 tsp vanilla extract, 1 tbsp monkfruit, and 3/4 cup plant-based milk.

Let sit overnight and enjoy with toppings of your choice. Here I added fresh blueberries, walnuts, hemp seeds, cacao nibs, and sunflower butter.
