Masters Pimento Cheese Recipe

A dairy-free take on a Masters pimento cheese recipe with chickpeas. Creamy, tangy, and perfect for sandwiches or parties.

Ingredients

  • 1 15oz can Chickpeas, drained and rinsed
  • ¼ cup Pimento Cheese, I use the brand Treeline, if you can't find it just sub with regular cream cheese with a pinch of paprika and garlic powder
  • ¼ cup Vegan Mayo, I'm using the brand Hellman's
  • ¼ cup Vegan Shredded Cheese, I'm using the brand Violife
  • 2 heaping tbsp Sliced Pimentos, If you're not using Pimento Cheese, increase the sliced pimientos to 1/4 cup
  • pinch Sea Salt & Pepper
  • 4 slices White Bread

Instructions
 

  • Mash chickpeas with a fork or lightly pulse in a food processor.
  • Add mayo, pimento cheese, cheddar, pimentos, and salt & pepper.
  • Mix until creamy with slight texture.
  • Divide between 2 sandwiches and enjoy.
