The ingredients used in this Sweetgreen inspired dressing are super common – you probably already have most of them in your pantry! The key is using an abundance of fresh cilantro. Here are the ingredients used:

  • Cashews.
  • Fresh Cilantro.
  • Filtered Water.
  • Rice Vinegar.
  • Tamari.
  • Maple Syrup.
  • Nutritional Yeast.
  • Red Pepper Flakes.
  • Garlic.
  • Sea Salt.
  • Lime.

Tips to Keep it Fresh

When stored properly, this dressing can last nearly two weeks. Here’s how:

  1. Make sure it’s kept in an airtight container. You can store it in an airtight jar as pictured, but I prefer it in a squeeze bottle. 
  2. Use fresh cilantro. Either store bought, or fresh from your garden. Do not use dried cilantro!
  3. This is a Cilantro Cashew Dressing, but removing the cilantro is an option. This dressing it inspired by Sweetgreen’s Spicy Cashew Dressing, so removing the cilantro will essentially taste like that. Feel free to add in a touch of chipotle powder to make it more interesting.

Cilantro Cashew Dressing

Inspired by Sweetgreen's Spicy Cashew Dressing, this Cilantro Cashew dressing is vegan, creamy, and ultra flavorful.

Ingredients

  • 1 cup Cashews, soaked in boiling water
  • 1 cup Cilantro Leaves
  • ¾ cup Filtered Water
  • 1 Lime, juice from
  • 2 tbsp Nutritional Yeast
  • 3 Garlic Cloves
  • 2 tbsp Rice Vinegar
  • 2 tbsp Maple Syrup or Agave
  • 1.5 tsp Sea Salt
  • 2 tbsp Tamari
  • ½ tsp Red Pepper Flakes, optional

Instructions
 

  • Add your cashews to a bowl and top with boiling water. Let sit for about 20 minutes.
  • While your cashews are boiling, assemble your ingredients and add to a high speed blender.
  • Drain the cashews and add to the blender. Blend for about a minute or until the dressing is fully combined and creamy.
  • This dressing can last in the fridge in an airtight container for up to two weeks. I personally like to store it in a squeeze bottle for easy access.
