This cucumber salad is insanely easy to make. You only need a handful of ingredients (some of which you probably already have) and 5 minutes to throw it all together.
- Use Persian cucumbers – I know that’s not traditional with Japanese cucumber salads! But I find Persian cucumbers are so much easier to prepare and eat. Plus, they’re crunchier! I remove the ends first then cut the cucumber in half. Take one of the halves and slice is down the middle. Slice each halve down the middle again, then start dicing. Repeat until you’ve diced 6 cucumbers.
- Gently toss in a large mixing bowl to ensure every cucumber is evenly tossed.
- Let marinate for about 20-30 minutes before you dig in.
- If you plan on tossing it with soba noodles, it’ll keep well in the fridge for about 4-5 days. If you keep the cucumber salad alone, it’ll last in the fridge about 2 days before it gets soggy.

Refreshing Japanese Cucumber Salad with Soba Noodles
Ingredients
- 8-10 oz Dried Soba Noodles
- 6 Persian Cucumbers
- ¼ cup Tamari
- ¼ cup Toasted Sesame Oil
- 3 tbsp Rice Vinegar
- 1 tsp Sea Salt
- ¼ cup Furikake
Instructions
- Bring a pot of water to a boil then add in your soba noodles. Cook in the boiling water for 8-10 minutes or until tender. Strain out the water then set aside to cool.
- Meanwhile, start dicing the cucumbers. Add to a large mixing bowl then toss with the remaining ingredients.
- Once the soba noodles are cooled, toss them with the cucumbers. Once fully tossed, let marinate in the fridge for at least 20 minutes.
- Enjoy or keep in an airtight container in the fridge for 4-5 days.
