Ingredients

  • 6 Eggs
  • ¼ cup Vegan Mayo, I use the brand Hellman's
  • 1 tsp Dijon Mustard
  • 1-2 tbsp Chopped Chives
  • ¼ tsp Sea Salt
  • ¼ tsp Black Pepper
  • 4 slices White Bread

Instructions
 

  • Bring a pot of water to a boil.
  • Carefully add eggs.
  • Cook for 10 minutes 30 seconds.
  • Transfer immediately to an ice bath for 2 minutes.
  • Peel and set aside.
  • Chop eggs small but not mushy.
  • Add mayo, dijon, chives, salt, and pepper.
  • Mix until creamy but textured.
  • Taste and adjust salt.
  • Chill at least 30 minutes before serving.
