This is inspired by the bacon and chive potato salad from Jordan Spieth’s Champions Dinner menu. I swapped in tempeh, and it honestly might be one of my favorite recipes I’ve made recently. What’s great is the flavor develops overtime so make it a day ahead for an even better result.
