Cook the sushi rice. Once done, remove from heat and add in the rice vinegar and tamari right away. Fluff with a rice paddle.
Add rice into the silicone mold of your choosing. Form into shape and use something like a cocktail muddler to really press it together. Carefully remove from the molds and place on your baking tray. I used the air fryer basket that comes with the Wonder Oven air fryer from Our Place and it turned out great.
If you find the rice isn't staying together well, keep the rice pressed firmly into the mold then place the entire mold into the freezer. After a few hours, you should easily be able to pop them out without any breakage.
Place in the air fryer and bake at 400 degrees for 10-12 minutes each side or until crispy.
While the rice is baking, assemble your ingredients. Slice or mash the avocados, slice the jalapeño, and whisk together the mayo and sriracha.
Once the rice is cool, add your toppings. I encourage you to make the whole batch of rice and freeze leftovers. When you're ready to enjoy, simply add back in the air fryer for a few minutes!
