Coconut Green Goddess Dressing

  • 1 container vegan coconut yogurt I used Siggi's Dairy plant based coconut yogurt
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt
  • splash water
  • blend fresh herbs I used cilantro, parsley, basil, and dill

Instructions

  • Preheat your air fryer or oven to 375 degrees.
  • Combine the batter ingredients in a mixing bowl. Mix until there are no lumps.
  • Chop up a 1/2 head or so of cauliflower into florets and add to a separate mixing bowl. Make sure your florets don’t have too long of a stem.
  • Pour the batter into the mixing bowl of florets and use a mixing spoon to gently combine. Each floret should be evenly coated with the batter.
  • On a plate add the bread crumbs, shredded coconut, and a pinch of sea salt. Mix to combine.
  • Roll each floret in the bread crumb coconut mixture until fully covered. Arrange in your air fryer and cook for 20 minutes.
  • While the coconut cauliflower wings are baking, blend the coconut green goddess ingredients in a blender. Once fully combined and creamy, serve with the now crispy coconut cauliflower wings.
