Vegan Lemon Poppy Seed Banana Bread

Ingredients

Wet Ingredients

  • 4 Ripe Bananas, peeled and mashed
  • ½ cup Fresh Lemon Juice, about 4 lemons
  • 2 Lemons, zest from
  • ¼ cup Liquid Coconut Oil, can sub for avocado oil
  • ¼ cup Organic Cane Sugar
  • 1 tsp Vanilla Extract

Dry Ingredients

  • 1 ¾ cup All-Purpose Flour
  • ½ tsp Baking Soda
  • 1 tsp Baking Powder
  • ¼ tsp Sea Salt
  • 2 tbsp Poppy Seeds

Instructions
 

  • Preheat oven to 350°F. Line a 9x5 loaf pan with parchment paper.
  • In a large bowl, mash the bananas and whisk in the wet ingredients.
  • In another bowl, whisk together the dry ingredients.
  • Combine wet and dry, stir until just combined (don’t overmix).
  • Pour into pan and bake 50–60 min until a toothpick comes out clean.
  • Let cool before cutting in.
