Japanese Ginger Slaw Salad Recipe

This Japanese ginger slaw salad is made with shredded iceberg lettuce tossed in a creamy carrot ginger dressing inspired by Japanese restaurant house salads. Fresh, healthy, easy, and packed with flavor.

Ingredients

Salad

  • 1 head Iceberg Lettuce, finely shredded

Carrot Ginger Dressing

  • 2 Medium Carrots
  • 1 Garlic Clove
  • ½ Shallot
  • ¼ Lemon, juice from
  • 1-2 inch Ginger Root, Start with 1, taste, and adjust as desired
  • 1 tbsp Tamari
  • 1.5 tbsp Rice Vinegar
  • 2 tsp Mirin
  • ¼ cup Sesame Oil
  • ¾ tsp Sea Salt
  • ¼ tsp White Pepper
  • cup Filtered Water

Instructions
 

  • Grate 1 of the carrots and set aside.
  • Add the remaining carrot, garlic, shallot, lemon juice, ginger root, tamari, rice vinegar, mirin, sesame oil, sea salt, white pepper, and water to a blender.
  • Blend until smooth and creamy.
  • Stir the grated carrot into the dressing.
  • Add the shredded iceberg lettuce to a large bowl and pour a small amount of dressing over the top. Toss well until evenly coated.
  • Serve immediately and enjoy. Store leftover dressing in an airtight container in the fridge for up to 1 week.
