First start with the Maple Miso Tofu. Chop your block of high protein tofu into bite sized cubes.
Whisk the remaining Maple Miso Tofu ingredients together in a dish. Toss the tofu cubes with 3/4 of the mixture, reserve the rest to use later.
Air fry (or bake) your tofu at 400 degrees for about 20-30 minutes stirring once halfway through. Keep in mind the time depends on which machine you're using - it will take longest in the oven.
Once the tofu is done, toss with the rest of the maple miso sauce.
Either add everything into a large bowl as pictured, or divide between four portions. Mix the vegan mayo and sriracha together and drizzle over each bowl. Enjoy!
