Artichoke “Chick’n” Salad with a Creamy Turmeric Dressing
Savory & refreshing weight loss salad with artichoke hearts and seitan “chick’n” topped with a delicious, creamy turmeric tahini dressing.
Servings: 1 Salad
Creamy Turmeric Tahini Dressing
- 1 tbsp tahini
- 1/2 tbsp lemon juice
- 1/4 tsp turmeric
- 1/4 tsp freshly ground pepper
- 1/4 tsp sea salt
- 1 tbsp filtered water
Seitan “Chick’n”
- 1/4 block seitan
- 1 tsp rosemary sprigs
- 1 tsp paprika
- 1/2 tsp sea salt
- oil spray I use the olive oil spray from Trader Joe’s
Lemon Garlic Quinoa
- 1/2 cup tricolor quinoa
- 1 juice of lemon
- 1 tbsp minced garlic
- 1/4 cup diced onions
- 3/4 cup water
Salad
- 1-2 cup romaine
- 1/2 cup artichoke hearts
- 1/4 cup hearts of palm
- 6-8 diced cherry tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced cucumber
Creamy Turmeric Tahini Dressing
add all ingredients in a small dish & whisk to combine. to get all the benefits of the turmeric, make sure the pepper you use is freshly cracked. If the consistency of the dressing is too thick for you, add 1-2 more tbsp of filtered water
Lemon Garlic Quinoa
wash & rinse quinoa in a mesh sieve. heat garlic, onions, and the juice of 1/2 a lemon in a saucepan. after a few minutes, add the quinoa and water and cover with a lid. as soon as the quinoa is done, add the juice of the remaining half of the lemon and mix to combine. use 1/2 cup of the cooked quinoa and store the rest in an airtight container
Seitan “Chick’n”
crumble seitan with a fork and add to a small bowl. I like to keep the seitan crumbles on the larger side
add rosemary sprigs, sea salt, and paprika. mix ingredients making sure the seitan is all evenly coated
spray a saucepan with your oil spray and let heat for a few minutes. add the coated seitan and cook on a medium-high heat for 7-9 minutes.
Salad
add romaine to a large bowl and top with the diced red onions, diced cherry tomatoes, and diced cucumber
open can of artichoke hearts and hearts of palm and drain & rinse making sure to wash thoroughly. add on top of lettuce with the seitan “chick’n” and lemon quinoa. drizzle the creamy turmeric tahini dressing on top and serve!
if you prepare this salad in advance, make sure to store the seitan “chick’n” and lemon garlic quinoa in separate containers as you will have to reheat them when you’re ready to eat. you can eat them cold, but it’s best warm.
