set oven to 350 degrees
combine flours, baking powder, baking soda, salt, golden monkfruit, and nutmeg in a bowl
in a separate bowl, mash the bananas. add in the coconut milk, carrots, walnuts, and coconut oil. once evenly mixed, combine both bowls
mixture will be very gooey and sticky - make sure to mix everything through so there’s no loose powder
lightly grease the pan you’re using before adding in mixture - keep it as even as possible. I didn’t do this in mine, but feel free to add additional toppings before baking - more walnuts or a banana sliced down the middle would be great
bake for 50 min switching halfway through. let cool for 20 min before popping it out - I sprinkled vegan powdered sugar and more walnuts on top
