in a small dish add the ground flax and water. set aside (this will be your “egg”)
heat your air fryer or oven to 400 and add walnuts in for 15-20 min flipping once halfway through. air fryer requires less time
in a medium bowl add the flour, baking powder, matcha, and salt. once mixed together, add the milk, vanilla extract, and flax egg mixture which should be gooey by now
add a touch of coconut oil spray to the pan and start cooking the pancakes! they only need a few min per side
once the pancakes are cooked, dice a banana and pan fry them for a minute or so on each side. top the pancakes with the banana, baked walnuts, maple syrup, and vegan powdered sugar
