This Simple Italian Salad is a classic go-to. It's easy to prep, flavorful, and a great safe option to serve at dinner parties.
- 4 cups chopped romaine
- 2 - 3 tbsp pine nuts
- 1 can chickpeas, drained and rinsed use 1/4 can per portion
- 1 cup cherry tomatoes, chopped
- 1 - 2 persian cucumbers, thinly sliced
- 3 - 4 tbsp vegan feta
- 1 small avocado
- sea salt & pepper, to taste
- 1 shallot, sliced
- 4 tbsp olive oil dressing
- 1 tbsp balsamic vinegar dressing
