Refreshing Japanese Cucumber Salad with Soba Noodles

Servings: 4 people

Ingredients

  • 8-10 oz Dried Soba Noodles
  • 6 Persian Cucumbers
  • 1/4 cup Tamari
  • 1/4 cup Toasted Sesame Oil
  • 3 tbsp Rice Vinegar
  • 1 tsp Sea Salt
  • 1/4 cup Furikake

Instructions

  • Bring a pot of water to a boil then add in your soba noodles. Cook in the boiling water for 8-10 minutes or until tender. Strain out the water then set aside to cool.
  • Meanwhile, start dicing the cucumbers. Add to a large mixing bowl then toss with the remaining ingredients.
  • Once the soba noodles are cooled, toss them with the cucumbers. Once fully tossed, let marinate in the fridge for at least 20 minutes.
  • Enjoy or keep in an airtight container in the fridge for 4-5 days.
