Bring a pot of water to a boil then add in your soba noodles. Cook in the boiling water for 8-10 minutes or until tender. Strain out the water then set aside to cool.
Meanwhile, start dicing the cucumbers. Add to a large mixing bowl then toss with the remaining ingredients.
Once the soba noodles are cooled, toss them with the cucumbers. Once fully tossed, let marinate in the fridge for at least 20 minutes.
Enjoy or keep in an airtight container in the fridge for 4-5 days.
