Cilantro Cashew Dressing
Inspired by Sweetgreen's Spicy Cashew Dressing, this Cilantro Cashew dressing is vegan, creamy, and ultra flavorful.

Cashews, soaked in boiling water

Cilantro Leaves

Filtered Water

Lime, juice from

tbsp
Nutritional Yeast

Garlic Cloves

tbsp
Rice Vinegar

tbsp
Maple Syrup or Agave
1.5
tsp
Sea Salt

tbsp
Tamari

tsp
Red Pepper Flakes

Instructions
Add your cashews to a bowl and top with boiling water. Let sit for about 20 minutes.
While your cashews are boiling, assemble your ingredients and add to a high speed blender.
Drain the cashews and add to the blender. Blend for about a minute or until the dressing is fully combined and creamy.
This dressing can last in the fridge in an airtight container for up to two weeks. I personally like to store it in a squeeze bottle for easy access.
